    • Description

Elston is named for Elston Hall in Nottinghamshire, the ancestral home of Charles Darwin’s family. Darwin’s ‘theory of natural selection’ forms the basis of modern evolutionary theory, the foundation of biology. The wyvern symbol of Elston Hall appears on the label. A delightful perfume of warm lemon cream pie with brown baking spices, seductive hazelnut against sun-ripened stone fruits giving way to figs and nougat. Pure, elegant fruit flavours with peaches and limes persisting. It is the salivating, chalky texture that fires up your taste buds, maintaining a poise and elegance throughout the palate and finishing on a long, fine point that builds and builds. Ripe fruit from Havelock Hills of superb quality is hand-harvested and gently pressed in whole clusters. Partial malolactic fermentation along with extended lees contact and a blend of new and old oak renders a complex, zesty and delightful Chardonnay
