The chalk-rich clay soils impart a notable minerality and structure to the wine.

Les Manyes is crafted from hand-harvested grapes that are fermented whole and aged for 8 months in cement, enhancing its character and purity. The wine reveals a wild and tangy nose with notes of white pepper, mezcal, blood oranges, forest floor, and dried herbs.
