Tasting Notes

A beautiful garnet hue with aromas of black currant, strawberry, pomegranate, and rose petals with a whiff of white pepper and struck flint. This unique bouquet is followed on the palate with fresh basil, cardamom, allspice, strawberry, and tart cherry. The wine is ethereal and complex with fine tannins and incredible persistence, finishing with distinctive salinity. Intense fragrance, unique savoury undertones, and electric energy are the hallmarks of Valli Waitaki Pinot Noir and the 2024 vintage has added depth and concentration. Mesmerising at release, this wine will continue to develop for 20+ years ” Jen Parr - February 2026

Vinification & Cultivation

Vineyard Cultivation

Valli, founded in 1998 by Grant Taylor, was among the first to champion single-vineyard Pinot Noir across Otago's sub-regions. The Waitaki Vineyard sits in the Waitaki Valley of North Otago, one of New Zealand's newer, cooler cool-climate districts, where limestone-influenced clay soils give the wine its saline minerality and fine bones. The valley's marginal climate and slow ripening favour perfume and freshness over power. Vineyards are farmed for detail and site expression, with hand-picking and parcel-by-parcel handling; the 2024 fruit was gathered to preserve the bright red-fruit, floral and mineral profile that marks this bottling.

Vinification

In keeping with Valli's approach, the fruit was hand-harvested and fermented parcel by parcel, with a portion of whole bunches to build perfume and spine and the remainder destemmed and fermented on skins. After gentle pressing the wine was matured in French oak barrels, a minor share new, to frame rather than mask the vineyard character, before bottling. The result is complex and fragrant, with sweet cherry, dried herb, mushroom and roasted-hazelnut notes over a silky, gently tannic palate and a long, savoury finish.

About this Wine

Pinot Noir

A thin-skinned red grape known for its light body, red fruit character, and sensitivity to terroir, grown around the world.

Central Otago

Central Otago is the southernmost wine growing region in the world, located at a latitude of 45 degrees south, on New Zealand’s south island. A spectacular landscape makes the region one of the most scenic wine regions if not in the world then certainly in New Zealand. Central to the region is the tourist destination of Queenstown, which is a great base to make wine trips from. Heavy mineral deposits in silt loams are typical for the soils in Central Otago, but is unlike any other region in New Zealand. The Otago region is the countries only ‘continental ’ wine growing region. Pinot Noir is the flagship red varietal, which is very well suited to the regions large diurnal shifts (a large diurnal shift means a big difference between low and high temperatures) and also the regions long, cool and dry autumn. The Pinot Noirs coming out of the Otago region are most often fragrant, lush Pinot Noirs with silky textures and true fruit intensity. Aromatic whites also thrive, in particular Riesling where anything from bone-dry to very sweet can be made. Gewurztraminer, Pinot Gris and lesser amounts of Chardonnay is also made to a very high quality. Central Otago is in Jancis Robinson’s top five New World wine producing regions.
