Vilaura is a boutique New Zealand sparkling house dedicated to expressing regional character through the traditional method. The Hawke's Bay Blanc de Blancs 2021 comes from free-draining gravel and alluvial soils in the Gimblett Gravels subregion, a warm yet maritime area known for ripe, aromatic Chardonnay. Grapes were hand picked early in the season to capture natural acidity and whole‑bunch pressed. Fermentation took place in stainless steel with a portion in old barrels to build mid‑palate weight, and the base wine underwent full malolactic conversion for softness. After blending, the wine was bottled for secondary fermentation and aged on its lees for two years before disgorgement with a low dosage. At 12.5% alcohol, the wine shows pale gold colour and a persistent bead. Aromas of lemon, stone fruit, hazelnut and bread dough precede a palate that is dry and lively, with creamy texture and a crisp, mineral finish. Enjoy as an aperitif or with shellfish; it will drink well over the next five years.
