VILAURA's Marlborough Blanc de Blancs 2020 harnesses fruit from cool, maritime vineyards in the Southern Valleys of New Zealand's most famous wine region. Here the combination of sunny days and cool nights produces Chardonnay with intense citrus and floral aromas and vibrant acidity. Grapes were hand harvested and whole‑bunch pressed; primary fermentation occurred in stainless steel with a small proportion in old French oak, and the wine underwent full malolactic conversion. The base wine was bottled for secondary fermentation and aged on its lees for more than two years before disgorgement with a restrained dosage. Bottled at 12.5% alcohol, the wine is pale straw with a steady stream of tiny bubbles. Aromas of lemon zest, green apple and white flowers mix with hints of brioche and almond. The palate is dry, zesty and refined, with creamy mousse and a lingering, chalky finish. This Blanc de Blancs is delicious now but will develop further complexity over the next three to five years.
