The Cuvée 1821 Prosecco DOC embodies the house's dedication to quality and innovation, crafted from Glera grapes sourced from Zonin's hillside vineyards in the cool, breezy province of Treviso. Grapes are harvested at night to preserve crispness, then gently pressed and fermented in temperature-controlled stainless steel using selected yeasts for aromatic purity. The secondary fermentation - using the Charmat method - takes place in sealed tanks, ensuring persistent, elegant bubbles and a clean fruit profile. No oak is used, maintaining the wine's signature freshness. In the glass, this Prosecco is pale straw with lively aromas of apple, pear, acacia blossom and hints of citrus zest. The palate is extra-dry, with a fine mousse, green apple and pear flavours, and a crisp, clean finish that's both refreshing and food-friendly.
