Fermented at cool temperatures in stainless steel, the 2023 Bourgogne Aligote sees time on fine lees to add subtle texture without oak influence, keeping the variety's cut and definition to the fore. In the glass it is brisk and incisive, led by lemon, green apple and white flowers over a light saline thread that reflects the grape's naturally high acidity. The palate is clean and linear with a crisp, mouthwatering finish, making it a versatile white Burgundy for aperitifs, gougeres and seafood. The style is deliberately precise and uncluttered, showing careful grower partnerships and Bichot's preference for protective handling and clarity in the cellar; serve well chilled to emphasise tension and the refreshing, dry finish.
