      Founded in 1831 in Beaune, Maison Albert Bichot brings long experience in Chablis to this appellation wine from 2023, sourced from sites on Kimmeridgian limestone and marl that shape the region's mineral signature. Fermentation was conducted at cool temperatures in stainless steel to protect aromatics and line, followed by a period on fine lees to add mid-palate weight while keeping the profile firmly unoaked. With oak absent, terroir speaks clearly: orchard fruit and lemon are set over a chalk and iodine thread. The palate is vibrant yet even, acidity clean and well integrated, and the texture sleek rather than creamy. The finish is precise, dry and lightly saline, extending with quiet persistence. This is a textbook Chablis for shellfish, white fish and simple poultry, and works well as an aperitif where clarity and refreshment are preferred. Serve well chilled to emphasise tension and the crisp, mouthwatering close.
