Description
Founded in 1860 and now part of the Bollinger family, Champagne Ayala is located in Ay in the Montagne de Reims and is known for its bright, precise house style that highlights freshness, purity and finesse. The Ayala Brut Majeur NV (Gift Box) is a non vintage cuvee blending approximately 45% Chardonnay, 35% Pinot Noir and 20% Meunier sourced from more than 70 crus across Champagne, including a significant proportion of Grand and Premier Cru sites. About 40 percent of reserve wines are included to maintain depth and consistency. All base wines are fermented in stainless steel vats to preserve fruit clarity, then aged on lees for an average of three years before disgorgement with a dosage of 7 grams per litre and bottled at 12 percent alcohol. In the glass it presents a pale gold colour with fine, persistent bubbles. The aroma shows citrus zest, green apple, pear, white flowers and subtle brioche. The palate is dry and balanced, combining crisp acidity with a supple texture and notes of lemon, peach, biscuit and chalky minerality. The finish is long, fresh and precise. Serve at 8 to 10 degrees Celsius; excellent as an aperitif or paired with oysters, grilled fish, poultry or soft cheeses.
