Description
Billecart‑Salmon's non‑vintage Brut Réserve anchors the house portfolio and reflects a philosophy of meticulous blending developed since its founding in 1818. Grapes for this cuvée are drawn from more than thirty vineyard parcels across the Montagne de Reims, Côte des Blancs and Vallée de la Marne, with an emphasis on chalk soils. The blend is based on Pinot Meunier for suppleness with equal parts Pinot Noir for structure and Chardonnay for freshness. Each variety is fermented separately in stainless steel at very low temperature and a portion of the base wine matures briefly in neutral oak. Reserve wines from up to four prior harvests account for roughly forty per cent of the final blend, ensuring continuity. After secondary fermentation in bottle the Brut Réserve remains on its lees in deep chalk cellars for about three years before riddling and disgorgement, with a dosage of around six grams per litre. At 12% alcohol under cork, it shows straw-gold hue, persistent mousse and aromas of orchard fruit, citrus zest and lightly toasted nuts. The palate delivers fine texture and vibrant acidity with a saline, chalk‑inflected finish. Drink now or cellar for five years.
