The rosé style has been a hallmark of Billecart‑Salmon since the house was founded in 1818 in Mareuil‑sur‑Ay, and the non‑vintage Le Rosé remains one of the benchmark pink Champagnes. Sourced from vineyards in the Côte des Blancs and Montagne de Reims, the blend combines Chardonnay for finesse with Pinot Noir and Meunier for red‑berry character. After gentle pressing, the base wines are fermented at cool temperature in stainless steel and kept separate by variety and cru; a portion of still red Pinot Noir from Mareuil‑sur‑Ay is added to achieve the delicate salmon hue. Reserve wines from prior years enhance complexity and consistency. The assemblage then undergoes secondary fermentation in bottle and rests sur latte for over three years before disgorgement and Brut dosage. Bottled at 12% alcohol, this rosé shows fine bubbles, aromas of strawberry, raspberry and citrus along with hints of almond and spice.
