Description
Champagne Franck Bonville is a family domaine based in Avize, with three generations cultivating Chardonnay on some of the finest chalk soils in the Côte des Blancs. Their non‑vintage Grand Cru Blanc de Blancs is assembled from multiple harvests grown in Avize, Oger and Le Mesnil‑sur‑Oger. Grapes are hand harvested and pressed quickly to capture freshness; fermentation takes place in stainless steel and enamel tanks, and malolactic conversion is carried out to soften the palate. Reserve wines held in tank for several years are added to provide depth and consistency. The wine undergoes secondary fermentation in bottle and ages on its lees for about thirty months before disgorgement with a low Brut dosage. Bottled at 12.5% alcohol, it shows a pale golden hue and a fine, persistent mousse. Aromas of green apple, lemon oil, white flowers and toasted brioche lead into a palate that is elegant, chalky and precise with vibrant acidity. This Blanc de Blancs is an excellent aperitif and will develop further complexity over five or more years.
