      Gonzalez Byass Tio Pepe Fino is the definitive expression of Jerez fino sherry, crafted from 100% Palomino Fino grown on the region’s chalk-rich albariza soils. After gentle pressing and fermentation, the base wine is fortified to 15% ABV and aged for a minimum of four years under a natural layer of flor yeast in seasoned American oak casks using the traditional solera and criadera system. This biological ageing preserves freshness and imparts the wine’s hallmark saline, nutty character. Pale straw in colour, it opens with lifted aromas of fresh almond, green apple, citrus peel and subtle bread dough, with a delicate sea-breeze note. The palate is bone-dry and finely etched, showing brisk acidity, hints of green olive, citrus and almond bitterness, all carried through a long, chalky finish. As a non-vintage fino, Tio Pepe is best enjoyed in its vibrant youth but will hold well beyond a year after bottling if stored correctly. Serve well chilled (6–8°C) alongside Iberican ham, salted almonds, anchovies, grilled seafood or sushi for a classic pairing.
