The 2023 vintage captures the essence of the season, offering an inviting nose of ripe white peach, lemon curd, and fresh nectarine.

Subtle hints of toasted hazelnut, brioche, and a whisper of flint add complexity. On the palate, vibrant citrus and stone fruit flavors are layered with delicate notes of white blossom and a touch of saline minerality, giving the wine an elegant and refreshing finish.

      Greystone draws its name from the unique limestone conglomerate that we find as the bedrock on which our vine roots grow in. A limestone mix of fossils, sea shells and small pebbles that have been fused together through the seismic movement of North Canterbury. Over time this ancient seabed has been pushed and folded upward.

      The 2023 vintage captures the essence of the season, offering an inviting nose of ripe white peach, lemon curd, and fresh nectarine. Subtle hints of toasted hazelnut, brioche, and a whisper of flint add complexity. On the palate, vibrant citrus and stone fruit flavors are layered with delicate notes of white blossom and a touch of saline minerality, giving the wine an elegant and refreshing finish. Traditional malolactic fermentation lends a creamy texture that balances the wine’s natural vibrancy, while its bright acidity ensures a long, focused finish.  This wine is a pleasure to enjoy now but will reward patience – cellar it for 10-12 years, and it will continue to evolve beautifully. For pairings, keep it simple yet indulgent: grilled salmon, roast pork belly, or creamy mushroom risotto.
