Fruit from selected Crus is handled with care, with cool fermentation in stainless steel to lock in primary detail. A broad reserve wine library supports consistency in the final assemblage, followed by prolonged lees aging for texture, with a considerate dosage added to balance the profile. In the glass it is bright and neatly formed, showing a fine mousse with honeyed citrus, poached pear and light brioche. Sweetness is poised by fresh acidity, keeping the finish lively rather than heavy. The balanced richness also suits dessert service without overpowering delicate fruit detail.
