      Mt Maude adapts Champagne methods to Central Otago’s cool climate, crafting a traditional sparkling wine from Chardonnay and Pinot Noir. The base wines were vinified in stainless steel and neutral barrels, blended across vintages, and refermented in bottle. Lees ageing for 36 months imparted complexity and autolytic depth before disgorgement and Brut dosage. Bottled at 12.5 percent ABV under natural cork, it shows pale straw colour and persistent fine bubbles. Aromas of green apple, citrus, and brioche precede a crisp, dry palate with lively acidity and mineral length. This non-vintage cuvee exemplifies precision winemaking in Otago, offering elegance and structure suited to aperitif or seafood pairing.
