Description
Mon Cheval is a boutique Waipara producer known for small-scale, handcrafted Pinot Noir from a close-planted vineyard in North Canterbury. The estate focuses on a mix of Burgundian clones that together create depth, perfume and structure.
In 2017, Pinot Noir clones UCD 5, 115, 10/5, 777 and 667 were hand-harvested, destemmed and fermented in small open vats. After pressing, the wine was transferred to French oak barrels, around one-quarter new, for 18 months of maturation. This approach emphasised balance between vibrant fruit expression, gentle oak influence and refined structure.
The finished wine is elegant and layered, showing red cherry, plum and spice aromas with subtle earthy complexity. The palate is silky and finely balanced, framed by supple tannins and bright acidity, leading to a long, harmonious finish. A poised Waipara Pinot Noir that combines immediacy with cellaring potential.
