      Organised Chaos is a Hawke’s Bay producer dedicated to small-batch wines that reflect both regional character and a hands-on approach to winemaking. The Mangatahi Terraces, with its elevated river gravels and cooler climate, provide Chardonnay of freshness and definition.

      In 2022, fruit from Mangatahi was pressed and fermented in a mix of stainless steel and seasoned French oak barrels. A portion of the wine completed malolactic fermentation, while all parcels rested on gross lees for six months with occasional stirring. This regime built texture and savoury depth while retaining clarity of fruit.

      The finished wine is finely balanced, showing citrus and stone fruit aromas with subtle oak spice. The palate combines creamy lees-derived texture with bright acidity and a clean, persistent finish. A refined Hawke’s Bay Chardonnay that marries vibrancy with gentle complexity.
