The Palliser Chardonnay 2023 is a finely balanced expression of Martinborough’s cool-climate style, uniting fruit purity with oak complexity and textural finesse. Hand-harvested fruit from estate vineyards was whole-bunch pressed and fermented predominantly with indigenous yeasts in French oak barriques, a portion of which were new, followed by maturation on lees with gentle stirring to enhance depth and structure. Bottled at around 13% ABV, the wine opens with aromas of lemon zest, crisp green apple and white peach, layered with subtle almond meal, nougat and hints of struck flint from lees and barrel influence. The palate is sleek and precise, delivering citrus and orchard fruit flavours wrapped in creamy texture and driven by vibrant acidity. A fine mineral thread and well-judged oak frame the wine through a long, poised finish. Elegant and expressive in youth but structured to develop greater complexity through 2029, this Chardonnay is an ideal match for roast poultry, seafood risotto or grilled white fish.
