      The Palliser The Griffin Methode Traditionelle 2021 is a flagship Martinborough sparkling wine that captures the region’s cool-climate precision and depth in a finely structured style. A blend of Chardonnay and Pinot Noir, it was crafted using the traditional method, with secondary fermentation in bottle and extended lees ageing for over three years prior to disgorgement. This careful maturation builds richness and complexity, contributing to a bouquet of brioche, baked sourdough and toasted almond layered with crisp apple, white peach, Mirabelle plum and citrus zest. The palate is refined and textural, beginning with a fine, persistent mousse and vibrant acidity that drive flavours of grapefruit pith, lemon tart and orchard fruit through a long, dry finish. Lees-derived savouriness and subtle autolytic notes add depth without weight, showcasing balance and elegance. Bottled at 12.5% ABV, this is a complex, ageworthy sparkling wine with a drinking window extending beyond 2033, ideal as an aperitif or alongside shellfish, creamy poultry dishes or soft cheeses.
