This careful maturation builds richness and complexity, contributing to a bouquet of brioche, baked sourdough and toasted almond layered with crisp apple, white peach, Mirabelle plum and citrus zest. The palate is refined and textural, beginning with a fine, persistent mousse and vibrant acidity that drive flavours of grapefruit pith, lemon tart and orchard fruit through a long, dry finish. Lees-derived savouriness and subtle autolytic notes add depth without weight, showcasing balance and elegance.
