      Twenty-One-Twelve is Paritua's flagship wine, produced only in exceptional years from the estate's oldest and lowest-yielding blocks. The 2021 blend features 69% Cabernet Sauvignon, 19% Cabernet Franc and 12% Merlot, all hand harvested and sorted before a long maceration. Fermentation in closed vats with pump-overs and plunging was followed by basket pressing to French oak barriques, half new, for up to 24 months of maturation. Deeply coloured and structured, the wine offers aromas of blackberry, plum and blackcurrant layered with cocoa, baking spice and oyster shell. The palate is full-bodied and polished, with ripe fruit, vibrant acidity and firm but elegant tannins. Bottled at 14% ABV, this wine will reward a decade or more of careful cellaring, gaining complexity and silkiness.
