      Paritua's Single Vineyard Cabernet Sauvignon comes from dry-farmed vines rooted in ancient gravels along Maraekakaho Road in Hawke's Bay. Low yields, warm days and cool nights shape the 2021 vintage, which was hand-picked and sorted before a gentle cold soak and fermentation below 30 degrees Celsius. Basket pressing preserved fruit purity before the wine spent nearly two years in French oak barriques, half of them new. At 14.5% ABV, the wine delivers classic cassis, blackberry and cocoa aromas with underlying cedar and subtle leaf. The palate is full-bodied and structured, with fine tannins, ripe black fruit and a savoury, persistent finish. This is an ageworthy Cabernet built to develop truffle and tobacco complexity over the next decade.
