      The Stone Paddock range focuses on single-varietal expressions from Paritua's sustainably farmed Hawke's Bay vineyards. The 2021 Cabernet Franc was hand-harvested, optically sorted and cold-soaked prior to fermentation with frequent pump-overs. The wine matured in French oak for up to a year before blending and bottling under screwcap. Bright ruby in the glass, it shows a perfumed bouquet of red currant, blackberry and violet with hints of cocoa, jasmine and dried herbs. The palate is silky, medium-bodied and framed by ripe tannins, crisp acidity and flavours of cassis, black plum and spice. At 14% ABV, this wine finishes long and dry, pairing beautifully with herb-crusted lamb or roasted vegetables.
