      Sato Wines, founded by Yoshiaki and Kyoko Sato, is a Central Otago estate dedicated to organic, minimal-intervention winemaking. The L'Atypique range showcases alternative approaches, using skin contact and extended ageing to emphasise texture and savoury complexity.

      In 2023, hand-picked Pinot Gris was fermented spontaneously after a month of skin contact, extracting colour, aroma and fine phenolics. The wine was then matured for more than a year in seasoned French oak barrels and bottled unfined, preserving its natural character.

      The finished wine is textural and distinctive, with flavours of dried orange peel, apricot and subtle savoury notes. A grainy tannin line and balanced acidity frame the palate, giving both structure and freshness. A layered Central Otago Pinot Gris that highlights the possibilities of skin-fermented whites.
