      Sato Wines is a Central Otago producer founded by Yoshiaki and Kyoko Sato, known for their organic, minimal-intervention approach and detailed expressions of site. The L'Atypique range highlights alternative winemaking styles that explore texture and structure.

      In 2023, Riesling from the Red Shed and Domain Road vineyards was destemmed and left on skins for nearly a month before gentle pressing. Fermentation occurred naturally in barrel, and the wine was matured for eleven months in neutral oak to build depth without overt oak flavour.

      The finished wine is distinctive and textural, offering lime, chamomile and ginger aromatics. The palate shows vibrant acidity and phenolic grip, creating tension and length. A bold, skin-fermented Riesling that combines freshness with savoury complexity.
